Mr. Fan, the president of Tsukii Corporation, and Mr. Awazu, the president of our association, had a meeting to discuss the business restructuring subsidy.

At the “Marriage of Sushi Nigiri and Japanese Sake” event held in March, foreigners were able to taste the local sake selected by the president of “Sakura Sake Shop”.
People from the United States, Spain, Germany, Vietnam, the Philippines, China, and Mongolia participated in the event.
It was very interesting to see the reactions of those who were drinking sake for the first time.Some of the participants were such sake freaks that they had their own sake fridges at home and stored over 100 bottles of sake, which made the event very exciting.

We held a sushi nigiri (hand-rolled sushi) experience and marriage with Japanese sake for foreigners living in Japan.

Sushi chefs from “Yatai zushi” explained how to make rice and roll seaweed, etc., hand-in-hand, so that even first-timers could make sushi.
Mr. Kondo, the president of Sakura Sake Shop, also known as the “Prince of Sake,” conducted a sake tasting with local sake carefully selected by him to go well with sushi.
Bentenya, a group of seven women from Nagoya, advertised their Hatcho miso powder in “Chindon’” that kind of Japanese band.
We received comments from participants such as “The sushi making experience was interesting!” “I didn’t realize how delicious sake could be.” and “Watching a Chindon performance was fun.

The event was held at the Miyako Hybrid Hotel in southern Los Angeles with influencers from all over the United States connected by Zoom, and the video was broadcast live on YouTube.

At Mizutani Sake Brewery, we participated in the process of pressing sake.
There is a process called “上槽(Jo^so^)” to squeeze the mash that has matured in the vat (tank).
In general, sake is squeezed using an automatic compression press called a “yabuta-shiki,” but some high-grade sake is squeezed using a method called “袋吊り 雫どり(fukuro-tsuri shizuku-dori)”.
As the name suggests, “袋吊り 雫どり(fukuro-tsuri shizuku-dori)” is a method of extracting new sake by placing the mash in a strong bag and hanging it in a tank to collect the drops that naturally drip down. It takes a lot of time and effort, so there is a limit to the amount of sake that can be made, but sake squeezed this way is said to have a completely different flavor than sake squeezed by machine.

■Mongolian Kite Tana
Mongolian Restaurant “Sato” opened in April 2019. After that, sales dropped sharply due to the corona. We are on the brink of bankruptcy. It was difficult to continue the business anymore. Therefore, we consulted with Inbound Association of Aichi.
Through consulting we noticed that since we had a network of Mongolians, we could introduce some work to Mongolians. So we decided to start a recruitment business.
First, we created a corporate registration document with an administrative scrivener that allows to start an employment placement business.
To continue business, in regard to finance and loan, we consulted with a tax accountant. We made a contract with an accounting consultant and they helped us regarding finance.
In order to increase our sales of restaurants, which is our main business, the member of the association use our place and introduced us many customers to our restaurant to secure our sales.
Corporate registration is completed one month after we consulting with the association. The company name was changed from “Mongolian restaurant Sato” to “Sato Co., Ltd”.
The application for a paid employment placement business permit, which is a business permit required to do an employment placement, is completed immediately.
The application will be approved two months later. Till then we are preparing the flow of business.

Until now, I couldn’t make any decisions by myself, and there was no one who I could consult about management, so I had no means.
However, by getting to know the members of the Inbound Association of Aichi, I was able to understand the management methods and mechanisms that I had never known before, and I was able to register the corporation I had hoped for in just one month later. As for the procedure, I was able to prepare and collect documents in a month from scratch, and after completing the corporate registration, I was able to apply quickly. I was able to proceed at such a high speed because I was supported by professionals in the association.
Also, it was very encouraging for me the member of the association to come to the store for encouragement and to have the store used by a group and to be close to me as a companion.
I also want to get my work on track as soon as possible and become a companion who can think about business with them.
Healthy Cooking From JAPAN
Aichi Prefecture is a treasure trove of fermented brewed foods.
In particular, the Chita Higashi Mikawa region is a rare center for fermented brewed foods in the world.
Using health foods produced in Aichi prefecture, we are sending out recipes that can be arranged in countries around the world.
It is a content that you can easily enjoy the healthiness of Japanese food and the secret of healthy longevity at homes.

Sightseeing presentation to Japan
We presented the charm of Nagoya at Japanese Food Expo 2020.

We introduced attractive tourist items in Aichi prefecture that touch the chords of inbound travelers with videos.
The video introduced three books, samurai culture, traditional crafts, and soul food, but the one that received the most response was soul food.
The source of Aichi’s soul food is Aichi’s traditional fermented foods. There is no doubt that dishes made with Hatcho Miso from Okazaki City are attractive tourist items.

Despite the high admission fee, some fans seem to come every year, giving a glimpse of the high level of interest in Japanese food among Americans.
As for the prepared Hatcho Miso powder, 17 bags for business use and 23 packs for home use were sold out.
There is a constant crowd of free samples of miso ice cream. However, what made me feel different from last year was that there were many participants who were shunned by ice cream containing milk. I could feel the development of vegan culture on the west coast.

Great response to retro design T-shirts and postcards reminiscent of the Showa period in Japan.
It became a booth with a constant number of visitors.
There is a long line in the Toro salmon sashimi tasting corner, and the Chirashizushi and Chirashizushi corners are also popular. Americans here realize that they have no resistance to raw fish.
We have enjoyed authentic Mongolian cuisine at the Mongolian restaurant “Sato”.
Mutton has a function to boost your immunity so if you eat Mongolian food, you will less likely get sick.
